Cilantro Lime Rice
Ingredients
- 1 cup basmati rice
- 1 1/2 cups water
- 1 tbsp chicken boullion
- 1/4 cup lime juice
- 2 tbsp or 3 cloves garlic, minced
- 1/2 tsp cumin
- 1 bay leaf
- 1/4β1/3 cup fresh cilantro, chopped
- To taste: salt
Directions
- In sauce pan, bring water to a boil with a pinch of salt, bouillon, garlic, and cumin.
- While the water comes to a boil, rinse the rice in mesh strainer. This will remove the excess starch from the rice, creating a purer flavor.
- Once the water is at a boil, add the rice and bay leaf. Cover and let simmer for 12β15 minutes or until rice is tender.
- Take off heat and remove the bay leaf. Stir in lime juice and cilantro to desired amount. Salt to taste.
