Cilantro Lime Rice

Ingredients

  • 1 cup basmati rice
  • 1 1/2 cups water
  • 1 tbsp chicken boullion
  • 1/4 cup lime juice
  • 2 tbsp or 3 cloves garlic, minced
  • 1/2 tsp cumin
  • 1 bay leaf
  • 1/4–1/3 cup fresh cilantro, chopped
  • To taste: salt

Directions

  1. In sauce pan, bring water to a boil with a pinch of salt, bouillon, garlic, and cumin.
  2. While the water comes to a boil, rinse the rice in mesh strainer. This will remove the excess starch from the rice, creating a purer flavor.
  3. Once the water is at a boil, add the rice and bay leaf. Cover and let simmer for 12–15 minutes or until rice is tender.
  4. Take off heat and remove the bay leaf. Stir in lime juice and cilantro to desired amount. Salt to taste.
