Equipment

  • Sauce pan

Ingredients

  • 1 cup miso1
  • 1 cup mirin
  • 1/2 cup sake (heavy pour this)
  • 2 tbsp sugar
  • 1 tbsp water

Directions

  1. Combine all ingredients in sauce pan over medium-high heat.
  2. Once the mixture gets bubbly, lower the heat to a simmer. Let it hang out on a low simmer for 20-ish minutes until it’s thickened.
  3. Pour into an airtight container and store in the fridge for up to 2 months, or use right away on some miso chicken.

Notes

  1. I recommend red miso. It has a much more robust flavor profile compared to white miso. But experiment! They’re all tasty.
